JLimoo - when using the Quick Selection Tool paint from the middle of your subject out. If the selection is jumping outside your subject, its color is too close to your background color. Remember you can use the OPT or ALT key to subtract extra areas from your selection. Also don't hesitate to use another selection tool after making an initial selection. There isn't a rule that says "One tool to rule them all." The secret is in the combinations of tools? & menus.

iwantiwantiwant2 & mattokc - while you both mention the Invert button was greyed out, did you try the keyboard shortcut CMD+I (Mac) CTRL+I (PC)? If that didn't work either, then the wrong layer was selected and/or the layer mask wasn't active. Look? closely at 1:43 in the video, the Hue/Saturation Adjustment Layer is selected (highlighted in blue). Look at the Layers panel & the Mask panel, the icons are the same. If it's not the same on your screen, click the Adjustment Layer again.

mattokc - while I am unable to? see exactly what steps you used, if the invert button was greyed out as you stated, then the mask was probably not selected. When working with a layer that has a layer mask, you can select either the object icon or the layer mask icon.
